Back in 1987 when Mary & Ernie opened Boccalino Grotto Restaurant in Canmore, Alberta they had one goal: to produce delicious food with top quality, fresh ingredients at a reasonable price. Drawing on Ernie's talents and expertise as a Chef, born and trained in Switzerland, this formula proved successful. The restaurant was a hit with locals, visitors and food critics for 13 years.
What started in the restaurant, as requests from patrons to take home a bottle of the house dressing, developed into a whole new business. The house dressing was dubbed SWISS DRESSING, as it was based on a popular flavor in Switzerland. It rapidly developed into a household favorite in Canmore and requests came in from far and wide. The salad dressing manufacturing business grew into its own government inspected facility. Producing delicious food with top quality fresh ingredients at a reasonable price remains the priority.
