Ernst Huerlimann, best known as Ernie, is the culinary and production poobah behind the dressings. He began his cooking apprenticeship in Landquart, Switzerland and practiced his trade in hotels in Les Diablerets, Lugano, and Gstaad. He spent a year in the Swiss military, marching and peeling potatoes (jk) and then a year in Hotel Business School in Zurich. His last posting in Switzerland before immigrating to Canada was Head Chef in an exclusive boutique hotel in Zurich where he received numerous accolades from food writers.

May, 1987 Ernie opens his first restaurant in a strip mall in Canmore.
